Brian and Christy Herbstreit recently opened Nothing Bundt Cakes in the Mira Vista Shopping Center.

The Westbank’s newest bakery, Nothing Bundt Cakes, has set out to do one thing and do it well: bundt cake.

It may seem like a simple business model, but it’s one that has worked well for the more than 60 other locations nationwide.

Brian and Christy Herbstreit of Cedar Park were banking on that trend when they decided to open the second Austin area location of Nothing Bundt Cake on Nov. 30.

“The business model itself has been proven, the product is outstanding, and it comes down to location and who’s doing it, and we believe in ourselves and that we’ll work as hard as we have to in order to be successful,” Brian Herbstreit said.

Before going into the bakery business, the couple owned a successful preschool north of Austin. They sold that business and decided to switch gears. She has a background in marketing, and he has a background in finance. They studied the markets, looked at opportunities and started scouting locations.

“We really wanted to be in Westlake,” Christy Herbstreit said. “We just think this is a great community.”

The couple had a hard time finding a spot in the Westbank, they said, because many shopping centers are anchored by grocery stores and have a bakery exclusion clause in most of their leases so that outsiders cannot compete with their in-store bakeries.

With the departure of Sprouts Market from the Mira Vista shopping center in 2011, it made the center an attractive option. The proximity to downtown Austin and MoPac Expressway coupled with the ease of entrance and exit from the center sealed the deal.

“Part of this business is that you have to be convenient,” Christy Herbstreit said. “It has to be easy to get your product.”

Nothing Bundt Cakes specializes in handmade cakes baked from scratch daily in the store. There are four sizes, ranging from the full-size bundt cake to tiny bundtinis that are smaller than cupcakes. There are 10 flavors of cake at any one time, with rotating seasonal flavors. While they always have cakes ready to go in the case, the shop can also do custom orders with decorations for any occasion.

The shop also carries a small selection of gifts like white chocolate popcorn, picture frames, stuffed animals and novelties so they can be a one-stop shop for gifts and cake.

In addition to consumer orders, the shop hopes to increase corporate orders as well. Nothing Bundt Cakes delivers anywhere in Austin and will ship those sturdy bundt cakes anywhere.

As far as marketing, the Herbstreits have already caught on to the well-known Westbank business play of community involvement and fundraising.

“I think Westlake is just such a close-knit community,” Brian Herbstreit said. “The more that you’re here and involved in the community, the more people respond to that. The places that don’t succeed here are the ones that don’t get involved.”
